Recipes I want to try

I am browsing through my favorite blog (http://www.skinnytaste.com/) and found a bunch of recipes I am dieing to try.

Now isn't that an impressive list!!! Now to organize them into a weekly menu. Can't wait to try them all!! Thanks Gina for having such great recipes, you really make me want to stick to my WW this time around!!

Lets make it a busy day today

So I decided that I want to get a lot done today!! I went and bought paint brushes so that I can finish that bookcase off. I also went to goodwill and found a little TV and stand to put it on for the kiddo's room. Both for under $15. I am going to attempt to sand it and prime it also so it will match the bookcase. I also found some red curtains on clearance at WalMart for the kiddo's room. So after nap I will try and hang those too...that may need to wait for the BF, but i would like to do it all on my own.

I didn't do so hot last night. Made cookies for the BF and they were so good I think I ate about 5 of them. I have no idea how many points they would be, so I guessed 5 points each and thus used up half of my weekly bonus points in one splurge!!! ICK!! That means I will have to really watch what I eat this weekend at the parties.

So today I started off the day having to go and get lab work done, so breakfast was delayed. But when I did eat i had yogurt (3p+) and a cup of berries in juice (3p+) and banana. For lunch I had my split pea soup, which was amazing!! A huge cup and a half for 7 p+, and a piece of bread and butter for a total of 11p+ for lunch. That leaves me with about 16 points for the rest of the day.

Making the pork chops tonight for dinner. Will be 5 p+ for the pork chops and 4p+ for the rice side dish. Super excited to make these as they look super yummy!!

Goals for today:
GET A CHRISTMAS TREE!!!!!!!
Move wood from backyard to the front yard===done
finish priming bookcase====done
sand and prime kiddo TV stand====done

Can not believe I have been writing each day

I have never been a diary writing type of person, so I am shocked at myself for logging on here each day and writing. Wow me!!

So I admit I weighed myself while picking kiddo up at Grandma's, and I liked what I saw. Hopefully on Tuesday it will be even better. I am currently 4 pounds behind my schedule. I need to work some fitness back into my daily life. Although next term I will be doing kickboxing, yogilates and open gym. So that should kick my weight loss into gear, maybe I will just get my eating style in control over break and worry about fitness in January.

I woke up late today (I know lazy lazy) Had an apple and a cookie for an estimated 3 points+. For lunch I just finished some tomato soup (4 P+) with some Gorgonzola cheese in it (3P+) and a banana (0P+)

Tonight I plan on having leftover enchiladas and salad.

Goals for today:
GET A CHRISTMAS TREE!!!!====I fear it may never happen
make cookies===made one batch...and then ate a few
Dr. appointment====all done!
Bookcase====sanded it and put a coat of primer
Put some color up in bedroom===not yet, Friday

Weigh in day

I was so worried that I would weigh in today and gain after the bad week I had. But I did great, lost 0.4 pounds!! Not a huge accomplishment but it is better then a gain. If I can stick to my plan this week I foresee a nice weight drop next weigh in.

I ate a banana before meeting and then my breakfast of oatmeal yogurt and strawberries during the meeting.

For lunch I had my Mushroom soup and some cottage cheese.

I also have split pea soup cooking in the crock pot, smells so great in here!! I am also going to surprise BF with some of his mom's cookies when he gets home from work today!!

For dinner tonight I am going to make chicken enchiladas from the leftover chicken from last night's dinner.

Goals for today:
Make cookies===maybe tomorrow, didn't have any vanilla
Sand and Prime bookcase====maybe Thursday
Find ugly Christmas sweaters for me and the BF.====no luck, now going to get tree skirts and make ponchos
Make dinner===and it was amazing!!!
Get a Christmas tree!!!=====keep putting this off and it will be Christmas.

And we got the bedroom primed. Turns out the BF is an extreme perfectionist about painting, and I am not. But we made up.

Had a great dinner of enchiladas and the leftover rice. Stole some cookies while dropping the kiddo off at Grandma's. And I enjoyed a chai while painting. So I finished the day with about negative 4 points.

Monday back on track

I am proud of today!! I made a menu for the week that is very believable and I think I can stick too!! I also sold my couch, HOORAY!! Cleaned house, and stuck to WW all day!

Since I woke up late I only ate an apple to tide me over till lunch.
For lunch I had a cup of Miso soup and a banana for only 1 point. Wasn't enough to fill me up soI also had a bowl of tomato soup with mozzarella cheese in it. (6 points+) and a sandwich thin with laughing cow cheese (4 points+)
And for dinner tonight I am going to make a fancy chicken dinner!!

Goals for the rest of the day:
Get plastic drop cloths down in bedroom==completed
Get closet emptied out===completed
Get Christmas tree===maybe tomorrow
Make dinner===completed

By the end of the day I still had 2 points+ left!

This week's menu

This is only a menu for the week's dinners.

Monday: Broiled or Grilled Pollo Sabroso and Scallion Cilantro Rice with Habaneros and Lime (not sure what the points plus are yet)
Tuesday:Chicken and White Bean Enchiladas with Creamy Salsa Verde Using the leftover chicken from Monday. And probably some Spanish rice.

Wednesday: Leftovers day!
Thursday: Pork Chops with Mushrooms and Shallots ( 5points+)and Rice with Spinach
Friday: Probably a salad or leftover before we head to the BF's office party. And I am going to make Skinny Taco Dip
Saturday: Most likely a salad before we head to our friends' Holiday party. I am going to think up a couple sides to bring so I can snack.

After kiddo gets up from nap I am going to the grocery store to get all the groceries for the week. I am also going to make a batch of CROCKPOT SPLIT PEA SOUP (7 points+)and Creamy Mushroom Soup (1 points+)to eat for lunches during the week. I love soup!! And I am hoping that the soups will freeze so I can use them for when the term starts!

So frustrated with me

So after doing semi-good all week I threw it all out the window this weekend.

I love BF, but when I am around him I eat like him and he is a big guy and I really should not be eating like a big guy if I want to become a small woman. So i am now scared to weigh in this week!!

I have also set a new goal for myself. I need to make a menu for the week! I found a recipe for crock pot split pea soup, going to make that tomorrow. While the kiddo sleeps tomorrow at nap time I am going to work on a menu for this week's dinners. I do find for breakfast and lunch during the week, but I fail when it comes to dinner time.

On a good note away from food. The BF and me picked out colors to paint our bedroom. And we completed a ton of stuff on our giant to do list, with only two bickers! We finished kiddo's bed, caulked the tub, fixed the toilet, I started the bookcase restoration. Now all that is left is to prime and paint our bedroom, finish the bookcase, and of course finish moving all of my crap in!! Oh and get a Christmas tree!!

Wish me luck on my Tuesday weigh in, I will not skip no matter how bad I have been!! And I am going to stay for the meeting no matter how busy I am!

The next day

So after yesterdays fail I need to stick to the guns, no screwing up today. So for breakfast I am having Oatmeal (3 points+) with blueberries in it (not sure about points for this, they are packed in real juice so I think that they are 3 points+) and a giant cup of fresh coffee.

My goal today is to not eat anything sweet that I don't know the points for. I would also like to get started my present wrapping.

For lunch I think I will have tomato salad and a laughing cow cheeses sandwich.

On break so that means no more slacking!

For the last few weeks I have been slacking on my points tracking, so today I decided that I need to be held responsible for it. So now I will track and also update on here.

I woke up late so I quickly ate a pear(0 points +) and a cheese stick(3 points+). Then I snuck a cookie(2 points+) while I was making lunch for the kiddos.

My lunch consisted of a salad with blue cheese vinaigrette and a 1/4 avocado (5 points +), a can of Campbell soup (4 points+) and a bowel of chopped up strawberries(0 points+).

My goal today is to make some Christmas cookies for the BF's school and also make a fancy roast for his dinner tonight. And maybe if I am super lucky move a couch and get a Christmas tree. PHEW I want to take a nap just thinking about all that.

Update to goals: Major FAIL!! So I did some moving, threw a roast in the crock pot, and made cupcakes for BF to take to his teachers. But I ate two of the cupcakes. So FAIL!! Which is really disappointing to me after doing so well all day.

Wine Choclate Ganache


I love food blogs, and I mean I LOVE food blogs!! I am subscribed to so many of them, my e-mail is constantly bombarded with images that make me drool!!

So when the e-mail came from the cupcake project blog (http://www.cupcakeproject.com/) with pictures of a cupcake with a dark chocolate, red wine ganache, I fell hard!!!

And what perfect timing. My friend Katie's birthday party and the perfect time to unleash an experimental cupcake on the masses!!

I decided to put this ganche on a raspberry beer chocolate cupcake. They turned out quite nice. Very very rich, next time I think they would be perfect filled with some sort of cream filling.

All in all the wine chocolate cupcakes reminded me of a fancy adult ho-ho. And I think with some work this may become a fall back recipe. Not anywhere close to my Irish CarBomb or PB&J. But it may make the list!!

First Day of the Second Year

So being welcomed back after being kicked out was a little less climatic then I expected. I thought I would feel deep relief and gratitude siting in class. But really I felt no different then I did any other time I went to class. Not that I am not grateful, don't get me wrong.

So I have begin to dream of buying a house today. even found the perfect one. I am now trying to figure out a way that an unemployed, full time student can purchase a house. Any ideas? So fingers crossed that this place stays on the market for another 10 months!!

School and ways to kill time

So here I am waiting on BF to finish a poker game that he might even win. And I find myself starting to panic under the load of school work that has piled up on my head. And yet am I reading the massive pages of reading, or doing the case study, or attempting the quizzes. Nope, I am watching Lifetime movies and waiting for BF to pick me up after a poker game. I can not bring myself to give away my last weekend, before the hell that second year is starting to sound like, away to school work.

So I am thinking that I started this blog and it is only fair if I actually write in it. If nothing else it will be something that I can do to distract my head.

Turns out that BF's game is lasting longer and longer...I have played in these games and I should now by now he isn't going to be done anytime soon. Might as well as stay in my pjs and enjoy Rosie O'Donnell in Riding the Bus with my Sister.
